Spicy Black Bean Burrito Bowl

Ingredients:

1 cup brown rice

1 can black beans, drained and rinsed

1 cup corn kernels

1 red bell pepper, diced

1 jalapeno pepper, seeded and minced

1/2 red onion, diced 2 cloves garlic, minced

1 teaspoon chili powder

1/2 teaspoon cumin

1/2 teaspoon paprika

Salt and pepper to taste 1 lime, juiced

Fresh cilantro, chopped (for garnish)

 

Directions:

Cook the brown rice according to package instructions.In a large skillet, heat some oil over medium heat.

Add the red onion, garlic, red bell pepper, and jalapeno pepper.

Cook until the vegetables are softened, about 5 minutes.

Add the black beans, corn kernels, chili powder, cumin, paprika, salt, and pepper to the skillet. Stir well to combine and cook for another 5 minutes.

Add the cooked brown rice to the skillet and mix everything together.

Cook for an additional 5 minutes to heat through. Remove from heat and drizzle with lime juice. Stir well. Serve the spicy black bean mixture in bowls and garnish with fresh cilantro. Enjoy!
