1 tablespoon almond flour
1 teaspoon vanilla extract
1 cup almond flour
4 tablespoons erythritol confectioners’ sweetener
1 cup nonfat plain Greek yogurt
1 ½ teaspoons baking powder
1 teaspoon ground cinnamon
½ teaspoon salt
Carefully to 325°F (165°C) according to the manufacturer’s instructions. Line the basket with parchment paper and sprinkle it with nonstick cooking spray. Combine almond flour, Greek yogurt, 2 tablespoons sweetener, baking powder, cinnamon, vanilla extract, and salt in a mixing dish.
Make the dough come together by kneading it with your hands. Flour your work surface, divide the dough into four equal pieces, and form into balls.
Using a bench scraper, cut each ball into 8 equal pieces. Roll each piece in flour and roll into a long, thin rope between your palms. Place all 8 ropes, one by one, into the preheated air fryer basket in a circular mound. Repeat with the rest of the dough balls.
Cooking spray should be sprayed on each funnel cake. 5 to 6 minutes in the air fryer until golden brown.
Flip each funnel cake over, coat with cooking spray, and continue to air fry for 3 to 4 minutes. Finish with the remaining 2 teaspoons of sweetener.
