Lentil Curry with Basmati Rice

Ingredients:

1 cup dried red lentils

1 cup basmati rice

1 onion, chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon curry powder

1 teaspoon cumin

1 teaspoon turmeric

1/2 teaspoon paprika

1 can coconut milk

1 can diced tomatoes

1 cup vegetable broth

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

 

Directions:

Rinse the red lentils under cold water. In a large saucepan, bring 2 cups of water to a boil.

Add the lentils and cook for about 15-20 minutes, or until tender. Drain and set aside.

In a separate saucepan, cook the basmati rice according to package instructions.

In a large skillet, heat some oil over medium heat. Add the onion, garlic, and ginger. Cook until the onion is translucent, about 5 minutes.

Add the curry powder, cumin, turmeric, paprika, salt, and pepper to the skillet. Stir well to coat the onions and spices.

Add the cooked lentils, coconut milk, diced tomatoes, and vegetable broth to the skillet.

Bring to a simmer and let it cook for about 15 minutes, stirring occasionally.

Adjust the seasoning if needed. Serve the lentil curry over the basmati rice and garnish with fresh cilantro.
