4 halibut fillets (about 6 ounces each)
2 tablespoons olive oil
1 teaspoon lime juice
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 ripe mango, peeled and diced
1/2 red bell pepper, diced
1/4 cup red onion, diced 1 jalapeño pepper, seeded and minced
2 tablespoons fresh cilantro, chopped
1 tablespoon lime juice
Preheat a grill or grill pan over medium-high heat.
In a small bowl, whisk together olive oil, lime juice, ground cumin, chili powder, salt, and black pepper.
Brush the halibut fillets with the olive oil mixture on both sides.
Grill the halibut fillets for about 4 minutes per side, or until they are cooked through and flake easily with a fork.
In another bowl, combine diced mango, red bell pepper, red onion, minced jalapeño pepper, chopped cilantro, and lime juice to make the mango salsa.
Serve the grilled halibut with the mango salsa on top.
