1 pound large shrimp, peeled and deveined
8 ounces smoked sausage, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow onion, sliced
2 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon Cajun seasoning
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper (optional) Salt and black pepper to taste 2 tablespoons fresh parsley, chopped (for garnish)
Heat olive oil in a large skillet over medium heat. Add sliced sausage to the skillet and cook until browned, about 3-4 minutes.
Add sliced bell peppers, onion, and minced garlic to the skillet.
Sauté until the vegetables are tender, about 5 minutes.
In a small bowl, mix together Cajun seasoning, paprika, cayenne pepper (if using), salt, and black pepper.
Add the shrimp to the skillet and sprinkle the Cajun seasoning mixture over the shrimp and vegetables. Stir well to coat everything evenly.
Cook for another 3-4 minutes, or until the shrimp are pink and cooked through.
Garnish with fresh parsley and serve hot.
